So Snow Leopard Server is supposed to support IPv6 mail but I'm not currently able to get it to work.  I've made sure that the firewall on my tunnel is forwarding all the mail ports to my server (before forwarding them the tunnelbroker ipv6 port scan wouldn't show the mail ports at all and then after forwarding them they showed up as closed).  I've made sure that the IPv6 firewall on my server is also not running.

I'm at a loss on how to open the mail ports for IPv6 on my server and Apple has no documentation for this except that IPv6 is supported in mail.

Solved it - had to add several listen commands in dovecot.conf
